Winemaker StĂ©phanie DouĂ© came to meet the Troyes public and introduce us to the family-run Champagne Didier DouĂ© estate, nestled on the hills above Montgueux. đïž
đ± The vineyard: an ecosystem to be respected
Across their 3.5 hectares, the plots are instantly recognisable: stony soils rich in grass cover, carefully tended vegetation, and gentle pruning to preserve the vineyardâs balance. When the soil turns yellow, itâs a sign of water stress â a careful reading of the living environment. Powdery mildew and downy mildew are treated naturally, using sulphur and copper. StĂ©phanie also draws inspiration from biodynamics: horsetail decoctions, working with the lunar cycles. đ The aim: to reintroduce fruit trees into the vineyards, limit erosion thanks to Montgueuxâs natural slopes, and always place respect for living things at the heart of every decision.
đŸ A winemaking process thought through from A to Z
It all begins with an old Coquard press, installed just above the vat room. The juice flows down by gravity over three levels, without being pumped, to preserve the quality of the harvest. In stainless-steel vats temperature-controlled by solar panels, the initial alcoholic fermentations are 100 per cent spontaneous. Malolactic fermentation takes place naturally, utilising the heat of the wines to minimise the use of additives. đĄïž
Disgorging is carried out on the fly, entirely on disgorging racks. And looking ahead, she is considering working with barrels â an exciting development currently under consideration. đ
