AurĂ©lie Barrat, winemaker at @champagne_barrat_masson, came to meet the public in Troyes to introduce us to her estate, nestled between the Marne and the Aube rivers, between BĂ©thon and Villenauxe-la-Grande. đŸ
đȘš Chalk: the foundation of it all. The Barrat Masson terroir rests on Campanian chalk. The estate has been committed to organic farming since 2009 â a decision that came about following a visit to a neighbouring estate, which convinced AurĂ©lie and her husband LoĂŻc to take the plunge. And yet, even when farming conventionally, they were already keeping their inputs to a minimum. đ±
Across their 9 hectares (of which 4 are vinified), 90 per cent is Chardonnay and 10 per cent Pinot Noir. The vines are carefully pruned to naturally limit disease.
đ± The soil is a geological layer; working the soil is a philosophy. Each geological layer brings a different character to the wine: the roots delve deep, explore and take the earth as their own.
đ A winemaking process in four stages. Two traditional Coquard presses, gentle pressing in five to six passes depending on the year â each fraction harvested separately, each revealing its own personality. The juices are then vinified in different containers (oaks, temperature-controlled stainless steel tanks, etc.) to produce up to four distinct âimagesâ from a single plot. It is with these four images that AurĂ©lie crafts her blends, which evolve from year to year to suit the vintages.
No dosage after disgorgement, no added sugar. The wine remains brut, natural and authentic.
đ„ Three cuvĂ©es with names in Old Champenois: La JancĂ©lie (âGourmandiseâ in Old Champenois), Fleur de Craie â a name born directly in the vineyards, on the Diderons plot where chalk outcrops at the surface, and where the âfleurâ pays homage to the vine blossom. And Les Margannes (âPearlâ in Greek via Old Champenois) â three champagnes that carry the history and language of this terroir in their very names.
Thank you, AurĂ©lie, for this wonderful journey through chalk and bubbles! đ And see you in the autumn for more Rendez-vous du Bouchon Bio events đž
