Established in Chamery since 1862, the Bonnet-Ponson estate cultivates around fifty plots on the northern slopes of the Montagne de Reims (Chamery, Vrigny, Coulommes, and Verzenay), covering a total surface area of 10.5 hectares. The entire vineyard has been certified organic since 2016, and every mechanized intervention in the vineyard is carefully considered with regard to its environmental footprint and its impact on soil life. With this in mind, limiting treatments and soil work has become a priority, naturally leading Cyril to take an interest in so-called “conservation” viticulture techniques such as agroforestry and the establishment of cover crops. In the cellar, practices are intentionally minimalist and respectful of the integrity of the fruit, with the aim of expressing the full potential of the terroirs in the most direct and pure way possible.
