✂️🍇🌱 The grape harvest is in full swing for our organic winegrowers! The ACB takes you to meet its organic members in the Aube region, right in the middle of the harvest! 😊🎉
This year, we’re heading to the Aube to meet our members in the midst of the harvest! 🔎
🌱 First stop: Domaine de Mondeville. The Chardonnay here produces a lovely juice with lovely acidity! Frost struck this year, leaving few but beautiful bunches on the vines. On site, four teams of eight people are hard at work harvesting.
🌱 Next, we head to Champagne Louise Brison, where the traditional Champagne pressing method is used: the musts are separated into four batches, without any acidification, to preserve their full natural expression.
🌱 We carry on to Champagne Fleury, where we observed the ‘retrousse’ process and were able to taste several musts at different stages.
🌱 Our journey ends at the Ruppert-Leroy estate, which has been practising biodynamics since 2013, with a resolutely traditional approach. Here, the wines and champagnes are produced without sulphur. We were also able to taste several juices at different stages — some still at rest, others already fermenting.
