Mondeville : A place full of energy, a place of vibration, a place that does not leave you indifferent… From this terroir full of history, Delphine and Laurent contemplate the southern Champagne of the Côte des Bar, its colorful hillsides, its vast forest massif.
It’s beautiful… From one season to the next, they become attached to the soul
of this place. It’s so fascinating… Driven according to the organic and biodynamic farming, the family vineyard is planted on the highest hillsides of Champagne, which peak at 369 meters above sea level. The aim is to work the vines sustainably, preserving biodiversity, soil quality and all the natural elements.
In the cellars, the effervescence of Pinot Noir is allowed to express itself, in its freest expression: original, poetic and sincere. The cellar’s gravity-fed system means that sulphur is completely eliminated and natural vinification is carried out.
At the crossroads of a sustainable and social approach, their work is part of the life of their region. All the team; family, employees, seasonal workers, apprentices and suppliers are local and live on the Côte des Bar and nearby Haute-Marne.
Inspired by Genius Loci, Mondeville is the reflection of a human history in a unique place.
