Presentation :
Champagne Solemme is located in Villers-Aux-Noeuds, in the heart of the Montagne de Reims Ouest, Premier Cru.
After taking over the family estate in 2006, Olivier Langlais created his brand Solemme in 2009, and engaged the conversion of the vineyard to organic viticulture.
All the vines have been certified Organic Agriculture since 2018, and biodynamic methods are applied on the vines as well as in the production of wines.
Born with a natural sensitivy and respect of the nature, Olivier Langlais constantly seeks to improve his techniques to give full life to the soil and enhance the harmony of the vine with its natural environment.
Each champagnes is based on a specific key value of the house: simplicity.
Single year, simple vinification in stainless steel tanks without chaptalization and without filtration, aging on latte of 36 months on average, then disgorging without adding sugar -with the exception of the cuvée Plénitude de Solemme, l’extra brut of the house.
