When, in 1997, Eric COLLINET took over the management of his 2.25 hectare estate planted with Pinot Noir and Chardonnay, it wasn’t out of a desire to carry on the family tradition, but rather out of his love of the earth and of “The King of Wines”. Although this passion for the soil and the magic that can be created from it, was his principle motivation, it has to be said that his genuine passion for studying and producing Burgundy truffles was also a consideration.

In 2011 this desire to work in harmony with Nature lead Eric and his wife, Martine, to convert their estate to organic farming out of respect for both the environment and for mankind. This respect is evident in every facet of his daily work tending the soil and the vines, listening to Nature, and being in tune with its rhythm season after season. Pinot Noir and Chardonnay grown in this way are veritable treasures from which Eric makes vins de terroir which reflect his personal vision of what champagne should be.

Listening to Nature, observing her and serving her requires just one simple thing: TIME

And it is time that embodies the philosophy of Champagne Éric COLLINET.
