On Thursday, 23 October 2025, the Troyes branch of the Association des Champagnes Biologiques hosted the first Rendez-vous du Bouchon Bio of the season.
đż HervĂ© Brisson, an organic winegrower in Vert-Toulon, in the heart of the SĂ©zanne hills, came to meet the Troyes public to share his story, his expertise and his organic Blanc de Blancs champagnes.
Participants were immersed in the chalky world of the Petit Morin Valley, near Sézanne.
âą In 2001, HervĂ© took over the family estate and produced his first harvest. Impressed by the taste of organic champagnes, he made the determined decision in 2016 to convert his entire vineyard to organic farming. đ±
âą A true craftsman, HervĂ© began making wine in his garage before launching himself fully into creating his own vintages. đŸ
âą Keen to preserve the unique character of his wines, he chooses natural containers, barrels and stoneware jars, and practises long ageing, for more than 10 months on lees, to give his champagnes their distinctive patina. đ
During the evening, three organic Blanc de Blancs were presented, each expressing a distinct personality! đ„đŸ
Deliciously round, vibrantly lively, or even deconstructive, combining complexity and freshness. Hervé offered a few suggestions for food and wine pairings: foie gras, Maroilles cheese gougÚres, salmon, citrus fruits, Espelette pepper.
