Presentation :

David Léclapart grew up in contact with the rhythms of vines and wine. After a conventional non-viticultural schooling, he trained at the Beaujeu School of Agrobiology and returned to the domaine with a desire to know and learn, a passionate desire to work in harmony with nature, a vital need to respect living things “from the vine to the glass”.

Biodynamics alone fills him with joy in this quest, in this apprenticeship, even if the risks and difficulties sometimes give rise to doubt and discouragement. This agricultural philosophy enables him to realize and respect four principles: purity, energy, pleasure and ecology.

Through biodynamic viticulture, he helps the vines to be reborn and grow by solar and terrestrial forces, offering you purity, energy and pleasure. His work in the cellar is the same as in the vineyard. He avoids any oenological technology that might amputate, injure or disguise the soul of his wine. Only the alchemy of terroir, climate, grape variety and man’s work stimulates his winemaking spirit.

Today, he works 3 hectares in Trépail, 1er cru, 90% of his vineyard is made up of Chardonnay, which he vinifies in Champagne and in coteau champenois in certain years, the rest in Pinot Noir, vinified in coteau champenois rouge or in Champagne blanc de noir. The l’aphrodisiaque cuvée is made from 80% chardonnay and 20% pinot noir, a reflection of its terroir.
