Presentation :

Winemaker since 1982 on the family estate, Pascal Doquet ran the house created by his parents from 1995 to 2003, with a total return to working the soil without herbicides since 2001. He became independent in 2004 and launched his own range with his wife Laura.

In 2017, Noé joined his parents. He now represents the fourth generation of the family as a champagne producer.

Located in Vertus, their 8.69 hectare estate is established for 60% in the south of the Côte des Blancs and 40% in the chalky terroirs of the Coteaux Vitryats.

The Terroirs are vinified separately, offering no less than three non-vintage Blanc de Blancs cuvées, and a “pure Côte des Blancs” Rosé incorporating Pinots Noirs from Vertus and Bergères-lès-Vertus.

The “Cœur de Terroirs” vintage champagnes beautifully illustrate the attributes of each individual village : Vertus and Le Mont Aimé for Premiers Crus, Le Mesnil-sur-Oger for Grand Cru.

The most natural methods possible are employed in the winemaking process. Only indigenous yeasts are used, including, since 2016, for the “prise de mousse” (second fermentation.) Approximately 50% of the wines are raised in wood.
